My family loves having pancakes for breakfast and even dinner but I have a large family so it can take forever to prepare them on the griddle.  These baked pancakes allow us to prepare pancakes quicker and still enjoy the great flavors of pancakes.

  • 3 Tablespoons Sugar
  • 2 Cups All-Purpose Flour
  • 3 Teaspoons Baking Powder
  • 1/2 Teaspoon Salt
  • 1 1/2 Cups Milk
  • 2 – 4 tablespoons Melted Butter
  • 2 Eggs
  • 1 Teaspoon Vanilla

How to cook pancakes in the oven. 

First, preheat your oven to 350 degrees. Spray a 9×13 baking dish with a non stick spray of your choice.  I love using my pyrex baking dish (they have some on sale here).

Next in a medium bowl whisk together the dry ingredients (sugar, flour, baking powder, and salt).

Then in a separate large bowl, whisk together the milk, eggs and melted butter.  Then stir the flour mixture into the milk mixture, just until combined. The batter will be a bit lumpy.

Pour the batter into the prepared pan and bake for 25-30 minutes, until edges are golden brown and a toothpick inserted in the center comes out clean.

Allow it to cool for about 5 minutes, then cut into squares and serve with your favorite toppings.

You can easily swap out the flour for whole wheat flour and the milk for low-fat milk for a healthier option for these delicious baked pancakes.

My kids usually can’t tell when I use wheat flour instead and this makes the baked pancakes higher in fiber so the pancakes are more filling and you stay fuller longer with this variation.
